Hangar 78 has prepared an impressive course calendar aimed at professionals for the last four months of 2019.

The Silikomart classroom proposes a total of 27 pastry courses taught by 19 acclaimed chefs worldwide. Frontline professionals such as Vincent Guerlais, who will present French classics on October 7 and 8, such as petits gäteaux and macarons from a modern and innovative perspective, following a rational working method, and Elias Läderach, World Chocolate Masters 2018, which will teach on November 5 and 6 to create an artistic chocolate piece from scratch, addressing topics such as different raw materials to modern techniques of tempering and decoration.

Apart from these two pastry chefs, the center will receive the visit of Miquel Guarro, who will show the attendees the world of chocolate (selection of cocoa, proposals for pastry, small decorations …); Guillaume Schopphoven, who will focus on the best baking techniques; Mauro Morandin, who will explain in detail how to make sweets, jelly beans, and fruit jellies; Denis Dianin with his sourdough workshop; Nicolas Bacherye, who will show his modern pastry concept, and Luca Bernardini, who will be in charge of several sessions dedicated to choux pastry, dough, ice cream for restauration, and an Italian chocolate duet with Andrea Mecozzi, among other topics of interest.

Enrico Magro, Davide Cassi, Ernst Knam, Nicolas Lambert, Fabrizio Donatone, Andrea Tortora, Luca Rasi, Claire Heitzler, Diego Crosara, and Antonio Mezzalira have just formed the cast of chefs who will pass through Hangar 78 with courses that have already become full.
