On November 8, Albert Adrià inaugurated Cakes & Bubbles in London, his first permanent establishment outside Spain. A place dedicated to sweet cuisine, located inside the Hotel Café Royal, and inspired by La Dolça, the dessert space in Tickets.
After his successful pop up in this same hotel in 2016, the chef enthusiastically faces the opening of this establishment that we had already announced during the summer. “I believe London is the capital of the world, and I’m looking forward to this new challenge,” he remarks. “It’s a project that excites me as a pastry chef – I’ve never had anything specifically related to the sweet world. Our approach and menu will be a cross between the classical and contemporary. I am looking forward to bringing this concept to Hotel Café Royal, London’s only modern grand hotel and the place I feel I belong whilst in the city.”
Adrià, voted The World’s Best Pastry Chef by The World’s 50 Best Restaurants, explains that with Cakes & Bubbles “we wanted to go a step further than just eating cake and a dessert- we want to offer an experience that will start with some sweet tapas for nibbling, combined with sparkling and sweet wines, then sharing some of the specialties we’ve developed over the past 30 years, which are what make us truly unique.” Specialties like the famous cheesecake from Tickets, with hazelnut notes and complete with a non-traditional white chocolate, egg flan with dark caramel, airwaffles with caramelised banana, and chocolate ninyoyaki cake balls, which are served with a wide selection of sparkling wines and champagnes.
