The Spanish chef Javier Guillén is a pastry globetrotter who works among Brazil, France and Spain. He gives advice both to local professionals and to the increasing number of incipient companies which manufacture 100% Brazilian high-end chocolate, he visits the cacao fazendas and gives classes at universities and schools throughout the country. In his collections, he opts for a color-filled creativity, focusing on the greatest simplicity regarding the amount of flavors and ingredients.
