From 1 to 18 November, the Asia Pastry Forum 2015 will be held in the Academy of Pastry Arts Malaysia, an event in which great pastry professionals, including six MOFs, will be teaching professional hands-on workshops.
Thus, for example, Christophe Morel, who will act as one of the presidents of the jury for the World Chocolate Masters 2015, will be teaching a 3-day workshop on chocolate, praline and candy-making. An advanced course on chocolate-making which includes enrobed chocolates, bonbons, fudges, bars, praline paste, marzipan, marshmallow, fruit pate, nougats, licorice and sugar candy. Meanwhile, our collaborator Martín Lippo (so good #8, so good #10) will teach a course on molecular gastronomy in which the possibilities of liquid nitrogen, foam, spherifications and other techniques of fine dining restaurants will be revealed.
MOFs will also participate in the program, such as Stéphane Glacier (so good #2) who will present proposals for Christmas, Valentine’s Day and Easter delights; Jean-François Arnaud, who will focus on French pastries, and Stephane Treand who will teach Arts of Sugar Display with Airbrush and Pastillage.
