Available in French in our online bookstore, Books For Chefs, it  gathers 60 recipes without flour, without sugar, without eggs, or without butter, sometimes even without two, three or four of these magic ingredients. The author, who is a self-taught cook, assures us that it is not a mathematical or culinary challenge, but a collection of perfect recipes for customers who do not want or cannot eat any of these ingredients, whether due to intolerance, allergy, diet, or philosophy.

No flour

In this chapter, we find very diverse preparations, from coconut flan to vanilla and caramel rice pudding, orange and cardamom crème brûlée, and walnut cookies.

No eggs

Florentines, tarte tatin, crumble, panna cottas with mango and passion fruit… There are many dessert options that Thérond offers without having to resort to eggs.

 

No sugar

Chocolate mousse, chocolate and banana cake, gingerbread, pancakes, and chocolate allumettes are some of the proposals in the section dedicated to ‘sugar-free’.

No butter

In recipes without butter, Thérond proposes not using milk. In some recipes she uses almond milk which is easily found in a supermarket despite being considered an exotic ingredient. Some of the recipes in this section are carrot cake, meringue with rose praline, mantecados, clafoutis and Spanish cupcakes with lemon.

 

Without the four ingredients

Inside the book there are also recipes without any of the four ingredients. Specifically, four recipes: cereal bars, granola with nuts and chocolate, mendiants, and pâte à tartiner (spread) with chocolate and hazelnuts.
