Pascal Hainigue, pastry chef at the Bristol Paris, was born in Alsace, a region in the northeast of France where Christmas is celebrated with intensity. Yet he has sought inspiration from the North Pole to design this year’s spectacular bûche featuring a white polar bear, reminiscent of one of François Pompon’s most famous sculptures.

The icebergs, in chestnut mousse and with a kalamansi jelly heart, are placed on a dacquoise of hazelnuts and chestnuts. Undoubtedly, a unique creation with molds that have been thought up, designed, and cast in the Ateliers du Bristol, which makes one dream of floating in the Arctic Ocean and seeing the Northern Lights.
