Pierre Hermé and Cédric Grolet have collaborated to create the ephemeral piece Hazelnut-Lemon, which combines two essential ingredients from their repertoires: the Maison Hermé macaron and Grolet’s splendidly technical and succulent fruits. A creation, the result of the union of two generations and two visions, which is offered exclusively by request on its web pages, from September 24 to October 18.

In April 2019, both pastry chefs made a four-handed recipe at the Art’e Gustu Festival in Aleria (Corsica) with their favorite ingredients: hazelnut, lemon, and the macaron. To expand this experience and share it with many more people, these two chefs have met again in 2020 to design this unique and gourmand cake, “with a simple appearance but with great complexity when it comes to preparing it. All technique has to do with taste. The citrus fruit brings fragrance, acidity, and bitterness, a brutal counterpoint to nuts”, explains Hermé.

Grolet, who never mixes flavors in his creations, discovered “an association that gives meaning to this cake. The raw hazelnut provides a sweet and slightly toasted flavor, the lemon awakens, and the nuts give a daring touch”.
