A 3D brioche Versailles for Bastille Day

To celebrate Bastille Day (14 July), Modernist Cuisine, alongside 3D Systems Culinary, elaborated a 3D brioche recreating the ostentatious Palace of Versailles.

The project began with a hand-drawn sketch by chef Francisco Migoya, which 3D Systems Culinary then transformed into a 3D digital model. A sugar structure which captures architect Louis Le Vau’s work and the grandiosity of baroque architecture in great detail: the repetition and symmetry of the windows and gates as well as the detailed moldings of filigree and foliage.

From here, Migoya’s team created a brioche as it would have been eaten in 18th-century France—with a fat dollop of whipped cream (because everything is better with whipped cream), and then farm-fresh raspberries were added for a bright pop of color.
