The great French maestro, Christophe Adam, set himself the task of discovering the many faces of the éclair. In doing so, it would be impossible not to include the most refreshing version, ice cream éclairs. There are five varieties, inspired by some of his many other recipes, which have been key to the success of Adam’s shop in Paris: pistachio-strawberry, chocolate-praline, caramel-salted butter and passion fruit-raspberry.
Every one of these creations contains a smooth creamy ice cream and flavoured coulis, which are placed on top of choux pastry, which is cut into two. All of it is coated with a chocolate icing, decorated with a topping and inserted into a tube filled with ice cream. Irresistably gourmande!
