The Championnat de France du Dessert 2016’s call for applications begins

Ana RodríguezRegistration for participating in the 42nd edition of the Championnat de France du Dessert opens on 1 September. The competition will be presided over by Jérôme Chaucesse (so good #14), pastry chef at the legendary Hotel de Crillon and MOF Pâtissier 2015.
Since its creation in 1974, the competition, organized by le Centre d’études et de documentation du sucre (CEDUS), wants to show the creativity in restaurant plated desserts.
The competition is divided into two categories: junior (students and apprentices, maximum 25 years of age, from high schools and CFA) and professionals (French or foreign pastry chefs and cooks who work in France, as well as French chefs working outside their country). The candidates in both modalities will have to create a plated dessert for ten people in three hours, as indicated by the regulation.
The regional finals will be held between January and February 2016, and the national final will be on 22 and 23 March 2016 in Biarritz.
