Matéo Attard, France’s 2022 Best Apprentice Chocolatier Pastry Chef

Ana RodríguezMatéo Attard, from l’Université des Métiers-CFA de Bayonne, received the title of Best Apprentice Chocolate Confectioner in France in a new competition organized by the Confédération des Chocolatiers Confiseurs on November 8.
For seven hours, nine contestants had to carry out two chocolate tests, a pastry test, a pastry or chocolate specialty, a commercial montage on biodiversity -the theme of this first edition, and a presentation of all their creations as a showcase.
“For an apprentice, this title is very important because it constitutes a true recognition of the great names in chocolate. After months of work, stress, and challenges, it is a real reward for me and all those who have supported me: my family, my teachers, and my company (“La Couronne” in Pau)”, says Attard.
Thierry Lalet, president of the Confederation, not only highlights the tenacity, the desire to excel, the acquired maturity, and the spirit of camaraderie of all the competitors, but he also anticipates that in 2023 there will be a new edition.
