In the end, there will be four countries that will defend their colors in the Coupe Europe de la Pâtisserie 2020, after Spain renounced its participation due to changes in the regulations and the advancement of the usual dates of the competition.

On January 12 and 13 in Europain (Paris), Sweden (Magdalena Larsson and Pia Cedvall), Switzerland (Nicoll Notter and Jean-Sebastien Guinet), Russia (Andrey Kanakin and Vladislav Panchenko), and Ukraine (Anton Shtypa and Dmytro Kolesnikov ) will have five hours to test their creativity in a show dedicated to nature. Only three of them will have a pass to the Coupe du Monde de la Pâtisserie, which will be held in Lyon in 2021. The tests to be carried out will be ten identical desserts that must include chocolate and a honey plant, three ice cream entremets with processed fruits only with edible elements, a chocolate sculpture, and a sugar sculpture.

One of the novelties of this edition is that, for the first time, it will host round tables and demonstrations around the theme of nature in pastry in all its forms: ecological responsibility, sustainable development, biodiversity, tastings and, of course, innovation.
