There is an interesting video of the advanced course that Jerome Landrieu (so good # 6, so good #7, so good # 13) has taught at the center he heads, the Chicago Chocolate Academy.
For four days, he revealed tricks and advice on how to construct a competitive chocolate showpiece to a privileged group of students, guiding them in every step of the creative process, from concept to design, not to mention the final artistic touches.
The students have not only learned new skills and styles to create their own sculptures, but also had the opportunity to exchange ideas with the chef and the rest of their peers.
The next call for the course is expected to be in August 2016, although the center is considering opening a new date if it receives a lot of demand from those interested.
