Prova Gourmet, a French brand specializing in vanilla and ingredients for the restaurant industry since 1946, is launching a new range of natural flavors, developed by chef Tristan Rousselot, with four flavors: cocoa, pistachio, hazelnut, and coconut.

 

This is an innovative and affordable alternative that responds to the rising price of cocoa and the growing popularity of expensive ingredients, such as pistachio pastes, which are increasingly used in trendy recipes like the Dubai Chocolate Bar. “Like perfumers, we carefully blend the molecules required to recreate each flavor’s complexity and authenticity. Our natural flavors are therefore a natural, affordable, and high-quality solution, offering an alternative to expensive raw materials,” explains Arnaud Monmarché, General Manager.

 

The use of this new range allows for a reduction in the amount of raw materials used. Artisans can save up to 20% on flavoring costs by reducing the amount of cocoa powder used in a recipe by 30% and replacing it with 1% Prova Gourmet natural cocoa flavoring. Similarly, with just 1% Prova Gourmet natural pistachio or hazelnut flavoring, the amount of paste or powder can be reduced by 50%, resulting in a saving of up to 35% in flavoring costs.

 

These natural flavorings are perfect for pastry or chocolate work, confectionery, ice cream making, and drinks. Easy to use, they enhance creams, ganaches, mousses, pralines, and ice creams. Allergen-free, they offer an alternative to traditional raw materials, combining convenience and flavor intensity.
