PastryBCN continues to organize quality training with international pastry figures. On September 26 and 27, they offer an online masterclass with David Bonet, a French chef with a long professional career. After years of study in hospitality and specializing in pastry, he traveled to England to work as an executive pastry chef at the prestigious Savoie hotel in London. He also gained experience at the sweet station at the legendary southern French hotel La Reserve de Beaulieu and at the three-Michelin-starred restaurant, Troisgros, in Roanne. Later, he assumed the role of executive pastry chef for The Mandarin Oriental Bangkok hotel and at the age of 30, he returned to France to work at the luxurious Hotel Martinez in Cannes for four years and joined the teaching team at Bellouet Conseil. After eight years in the school, he has created his own company.
The training, which will be transmitted via Zoom, is a great opportunity to discover this pastry chef and see how he prepares eight spectacular creations, four petit gateaux and four signature entremets.
On November 21 and 22 it will be the turn of Otto Tay, a member of the Malaysian team that won the last edition of the Coupe du Monde de la Pâtisserie. The chef, who will teach the class via Zoom, will show his techniques ot make chocolate showpieces, for instance the monkey, a showpiece presented at the CMP 2019, among other creations.
And in the month of December, they have revealed that they will count on Adriano Zumbo, one of the most popular pastry chefs in Australia with an extensive career.
