Around 7,000 exhibitors, with 87% international, 200 countries represented, 250,000 square meters of exhibition, nearly 70 hours of conferences and round tables, and 300,000 visitors. Reaching these numbers recorded in 2018, as stated by the Organization, will mean the absolute recovery of normalcy for the SIAL Paris fair, which this week held the presentation of its new edition in Madrid, led by its general director, Nicolas Trentesaux.

Giving continuity to the “Own the change” theme, launched in 2020, SIAL continues to focus on deciphering the need for a global food transition, echoing changes in consumption habits, registering movements towards a more respectful transformation of agriculture in terms of the environment, and promote the development of emerging companies that are inventing new models.

The fair, which will be held in the French capital from October 15 to 19, will feature the figure of renowned chef Mauro Colagreco as it’s sponsor. The Argentinian chef, owner of the three-star Mirazur restaurant on the Côte d’Azur, endorses the motto of the event: “The need for transformation is inescapable in the face of current challenges. Chefs and restaurants have a fundamental role in this change. The world has already changed, it’s up to us to catch up”.

SIAl 2022 is organized around a dozen represented sectors: Bio and wellness; Beverages, delicatessen and bakery; Equipment; Fruits and vegetables, Seafood products; Dairy products; Frozen products; catering and snacking; and Meats. And, in addition, it will have thematic areas such as the SIAL Innovation Space, which collects product and service innovations with great prizes for the best; SIAL Insights, the pooling of three major international studies that offer an unprecedented view of consumer expectations, food innovation, and trends in restaurants outside the home on a global scale. The results will be available as a white paper and will be incorporated into the discussions and conferences of the SIAL Talks programme. A space dedicated to start-ups to show proven or emerging technological solutions. Without forgetting SIAL Future Lab or SIAL La Cuisine.
