This year, Valrhona will hold its annual C³ in New York for the first time, at the 10th Annual StarChefs International Chefs Congress, on 25 and 26 October.
The competition is open to restaurant professionals over the age of 21 who are working in the United States or Canada and submit their application before 30 June. Each candidate will present an original plated dessert, as well as a restaurant chocolate bonbon, based on the theme “ILLANKA 63% Peru” using Valrhona’s ILLANKA 63 percent as the main ingredient both visually and in relation to taste. A selection committee composed of representatives of both l’Ecole Valrhona and StarChefs will select the six candidates who will be participating in the C3.
On 25 October, the six contestants will prepare their creations at l’Ecole Valrhona Brooklyn and on the 26th at the Brooklyn Expo Center in New York City. The panel of judges will evaluate the originality, taste, flavor combinations, textures and incorporation of competition theme to name the winner who will receive a prize of $5,000, a trophy and a chance to represent the North American region at the 2016 International C³ Competition at ICC. Second place will receive $2,000.
