Pierre-Jean Quinonero and Simon Lefebvre win the Championnat de France du Dessert 2021

Simon Lefebvre and Pierre-Jean Quinonero have won the 47th Championnat de France du Desserts in the junior and professional categories respectively. Lefebvre, from the Lycée des métiers Vauban – Auxerre, convinced the jury with his elegant Origine dessert, and Quinonero, from Restaurant Le Burgundy – Paris with a refreshing apple from Montois, coconut, and a touch of cumin.

This year, eco-responsibility was the theme of the competition that took place at the Lycée Georges Baptiste de Canteleu. Competitors had to take into account the origin, traceability, and seasonality of their ingredients, while avoiding waste. In addition, in the junior section the competitors had to work with a chocolate ganache with ratafia and convey the joy of gathering around a table after a harvest. In the professional section, the contestants had to use a buckwheat pâte sablée making technique and include a grape and champagne base, a buckwheat and saffron sablé base, and a pumpkin and saffron base.
