He is without a doubt one of the Spanish professional bakers who has stood out most internationally in competitions and industry events. Born into a well-established family business in Córdoba (Andalusia), José Roldán began his career in pastry, but soon felt irresistibly drawn to breadmaking. His training includes experiences in France and Switzerland, at the Richemont Club, which helped him excel in all kinds of competitions, including his victory in the 2015 Spanish National Baking Championship. Captain of Los Espigas (the Spanish National Baking Team), he was named World Baker of the Year 2025 by the UIBC.
In 2026, he began directing the International Bakery & Pastry Center (IBP Center), a new baking and pastry school in Córdoba.
