His creativity is nourished by flavors rather than shapes, and he expresses himself by drawing on a rich European knowledge base that allows him to rediscover Asian flavors in a totally different dimension. In terms of aesthetics, his is a fantasy patisserie, heavily inspired by the wonderland of chocolate.
