Brian Boclet’s childhood memories include preparing croissants and baguettes with his father and helping his mother in the family bakery in Roubaix, northern France. But it wasn’t until later that his calling truly dawned, and he decided to train as a professional baker. To do so, he attended L’École de Hotelerie de Lausanne, directed by Thomas Marie, where Boclet himself would become director a few years later.
The latest step after his time as head chef in Lausanne has been to launch an online platform for international trainers called ‘Elite Bakers’. The goal is to gather highly qualified bakers (MOF, authors of specialized books, MOF finalists, and other internationally renowned professionals) and provide them with a safe space from which to teach their masterclasses around the world.
