Begoña Rodrigo

Trained in kitchens in Amsterdam and London for ten years, Begoña Rodrigo opened La Salita in Valencia (Spain) at the end of 2005. A restaurant where she experiments with the most local products to give them a global concept and controls the entire vegetable production process from the moment they are grown. In 2019, he earned his first Michelin star, opened Nómada Urban Mood in the Mercado de Colón, and saw how his research into tubers and roots yielded interesting dishes. In recent years, he has created his own range of mother of vinegars.

“For me, all vinegars are like a dish in themselves. I try them and then decide what each one is best for”
