Sourdough, Mini Formats, and Filled Bars: The Three Key Trends in Bakery, Pastry, and Chocolate for 2026

Ana RodríguezA few months ago, Puratos revealed the eight global megatrends in bakery, pastry, and chocolate based on its latest Taste Tomorrow report, which gathers the opinions of more than 20,000 consumers in 56 countries.
We now focus on three trends that will solidify in 2026 in each of these three sectors.
Bakery: Sourdough Continues to Rise

As the study indicates, consumers continue to favor a healthy lifestyle. In fact, 67% choose products based on their health benefits. Bakery products not only have to satisfy cravings, but also provide nutritional benefits.
In this context, sourdough continues to rise in popularity. Of those surveyed, 58% believe it makes bread healthier, and 70% say it improves its flavor. Furthermore, its application in cakes and cookies is now also being explored.
The mix of textures is another rapidly growing factor in this sector. Contrasting textures are gaining momentum for 2026, with products combining crispy, flaky pastries with flavorful fillings. In this regard, a 19% increase in this type of texture is expected, following the 15% increase already seen in 2025.
Pastry: Less Quantity, More Quality

The Taste Tomorrow report confirms that today’s consumer is not giving up dessert, although they prefer smaller, higher-quality portions. The individual format, which allows for enjoyment without excess and promotes well-being, will be one of the key trends of 2026.
Regarding flavors, the rise of citrus and acidic flavors, already observed in 2025, continues. Likewise, the combination of classic sweetness with acidic notes is growing, as the latter are perceived as healthier and are visually appealing.
As with baking, the fusion of textures will be the third key. 86% of consumers say that a creamy texture adds flavor to a product, which explains the 51% increase in searches for ‘cream-filled desserts’ during 2025. Demand will continue to grow during 2026.
Chocolate: the filled chocolate bar is making a splash

Respondents are looking for memorable experiences that go beyond simple taste and stimulate all the senses. It’s no coincidence that today’s consumer seeks artisanal chocolates that evoke emotions. Exploration plays a key role, as reflected in the remarkable 137% increase in searches for Dubai chocolate.
Plant-based chocolate, which has been trending since 2024, continues to rise. Consumers are looking for sustainable and environmentally friendly products that also provide tasting pleasure. Brands understand that they must offer flavor, transparency, and values, not just ingredients.
Delicious fillings are the final key element. Searches for chocolate bar fillings have increased by an impressive 191% in 2025. Following the success of Dubai chocolate, the Angel Hair chocolate bar is positioned as a clear successor.
