Belgian pastry chef Paul Wittamer, inventor of the Samba cake, dies

Ana RodríguezPaul Wittamer, who ran the prestigious Maison Wittamer pastry shop with his sister Myriam for over 40 years, has passed away at the age of 81.
Founded by his grandfather Henri in 1910, Wittamer, under the leadership of Paul and his former executive chef Christophe Roesems, established itself as one of the few European pastry shops capable of maintaining the spirit and recipes practically unchanged since its inception.
Some of the Maison’s signature specialties created by Paul Wittamer include The Lingot d’Or (1972) and the Samba cake (1986), which won first prize in the Relais Desserts competition. It consists of two milk and dark chocolate mousses and a cocoa and almond biscuit.
