What potential does cocoa mass hold? To what extent can it transform the formulation and flavor profile of a ganache? These are some of the questions explored by Italian pastry chef and chocolatier Yuri Cestari—an instructor, demonstrator, and driving force behind innovative initiatives like the Ganache Solution platform.

In so good.. magazine 36, we delve—alongside him—into an ingredient that remains underexplored: cocoa mass. We examine its potential to customize the flavor and aroma profiles of a wide range of pastry and chocolate creations.

The potential of cocoa mass

In collaboration with Domori’s R&D team, Yuri Cestari has spent years researching the possibilities of cocoa mass. It is a fascinating ingredient, valued both for its aromatic identity—linked to the cacao’s origin—and for its technical role in the structure and balance of recipes.

In chocolate making, cocoa mass is the semi-finished product obtained before sugar is added and the refining process takes place. But what is its potential when incorporated into a recipe?

  • Formulation: numerous application possibilities in pastry, chocolate making, and ice cream production.
  • Flavor: unlike finished chocolate couvertures, it allows for a more direct expression of the cacao’s own aromatic qualities.
  • Technique: as it contains no added sucrose, one can select and balance functional sugars according to the recipe’s specific needs.

How to use cocoa mass in ganaches

Understanding the composition of cocoa mass is key to optimizing its use in ganaches. As a general guideline, cocoa mass consists of 45% cocoa solids and 55% fat.

The solids contain polysaccharides, proteins, and fibers that—during the ganache stabilization phase—absorb liquids and contribute structure and aromatic depth to the recipe. The fat component consists of cocoa butter, a fundamental element for the product’s structure and its melting properties during consumption.

In so good.. magazine issue 36, Yuri Cestari explains the aspects to consider when working with cocoa mass and presents four recipes designed to fully express its aromatic profiles while maintaining the balance and structure of each creation.
