Pastry chef Olivier Ménard, who since 2015 had co-directed Une Glace à Paris with Emmanuel Ryon, passed away at the end of July. Une Glace à Paris is an ice cream parlor that evokes great classics of pastry and ice cream through an ornamental aesthetic, inspired by the past and with a highly personal vision of flavor influenced by his travels.

 

Olivier’s passion for pastry began at the age of four in the Anjou region. His professional career included stints at establishments such as La Maison du Chocolat and Harrods, and his apprenticeship with Pierre Hermé, who highlighted “his unique level of exacting standards, sensitivity, and generosity. Olivier embodied the values ​​of our profession: high standards, the transmission of knowledge, a commitment to excellence, and a constant drive to improve.”

 

Following this loss, Emmanuel Ryon also shared a few words about his partner and friend on Instagram. “Together we brought Une Glace à Paris to life, driven by a shared passion, a commitment to excellence, and so many memories.
