Pierre Marcolini, Pastel collection

Aug 16, 2011 - Pierre Marcolini reveals you his secret for the Pastel collection. For those who don't know them yet, these summer chocolates go particularly well with sunshine and heat-waves. They are quite the opposite of the seasonal classics, frequently associated with grey skies and cold days. These dainty 5-gram morsels have a sumptuous fruity filing infused with lime, passion fruit, mango and yuzu (a japanese citrus). They are best eaten straight from the fridge (6°c). Cold attenuates taste, and we wanted to bring you chilled chocolates with an optimal flavour balance. The recipe was carefully designed so they would taste best at a cool temperature; they are not too sugary, even slighlty salty, with a fine shell of white or dark chocolate for sweetness and structure.
