Julien Álvarez, new pastry chef at Le Bristol Paris

Julien Álvarez (so good #8, so good #15), World Pastry Champion 2011, is the new pastry chef at Le Bristol Paris. He succeeds Laurent Jeannin who died last July.

After a professional apprenticeship with Carles Mampel, Philippe Conticini, Angelo Musa (so good #4, so good #14), and Jean Michel Perruchon (so good #8), the young chef worked in the French capital at the Peninsula Hotel and at Café Pouchkine. Now he joins Le Bristol with enthusiasm, where he will share the kitchen with Eric Frechon’s chef with three Michelin stars.

Customers will have to wait until the month of January to see Álvarez’s first creations for this iconic hotel.
